Meal Prep Sunday
For a while now "meal prep Sunday" has been super popular across my social media time lines and on Pinterest. Everyone is trying their best to get ready for summer, and by prepping all of their meals for the week, in one day, they are setting themselves up for success, saving money, and saving a boat load of time throughout the week.
So, I gave it a try. Now, I didn't cook EVERY meal I was going to eat for the week, as you are well aware, an egg and toast takes no time cook in the mornings, but you could boil all your week long eggs for an easy grab and go. Here is what we did.
The photo above shows a few different meals.
- Taco Salad
- Hamburger Patties
- A LARGE tub of grilled chicken tenders
- Grilled Squash & cut up Cucumbers
In the Freezer:
Cooked shrimp,
Here's my menu for the week
Mon - Sun -- Egg & Toast for Breakfast
Mon - Sun -- two servings of fruit each day
Monday
L - 5 oz Hamburger Patties 1 C sliced cucumbers
D - 5 oz Grilled Chicken 1 C grilled Squash -- Green Smoothie
Tuesday
L - 5 oz Grilled Chicken 1 C sliced Cucumbers
D - 5 oz Hamburger patties 1 C Sliced Cucumbers -- Green Smoothie
Wednesday
L - 5 oz Grilled Chicken 1 C sliced Cucumbers
D - 7 oz boiled shrimp 1 C squash chips (these are just raw squash--I like the crunch)
-- Green Smoothie
Thursday
L - 7 oz boiled Shrimp 1 C squash chips
D - Taco Salad 1/2 C Salsa 1/2 other veggies on top of salad
Friday
L - Taco Salad 1/2 C Salsa 1/2 other veggies on top of salad
D - Orange Chicken, 1 C cauliflower
Saturday
L - Orange Chicken, 1 C cauliflower
D - Meal at a wedding we are attending (steak and veggies :) )
Sunday
L - Salad at a restaurant with friends after church
D - Spaghetti (zoodles, meat, spaghetti sauce)
-Meal prep for the next week
I know that was a lot, but I think prepping on Sunday's will not only save us a TON of time since we are extremely busy, but it will help set us up for success and help us save money by not going out to eat because we don't want to cook.
Disclaimer*** My husband is in class Monday - Wednesday Nights so we typically have burgers, eggs, or chicken on those days because it's easy. If you don't like having the same meal more than once in the same week, you might want to get more creative with your cooking. This works for us though. Boiled shrimp is an EASY and fast meal on Wednesday's because I don't come home between work and church and I can thaw it out during the day and just measure it out at church and have a "no-brainier dinner".
Something else we do to set ourselves up for success is, we don't keep anything in the house that isn't Stimulock Protocol. This is easier for us I am sure since we do not have children and we are both eating the Stimulock Protocol meals. Once again, this works for us, but might not work for you. Find what does work for you and stick to it! You will reach your goal!

SNACK ATTACK -- Pop Corn
The clock reads 2:00PM and I sit at my desk, or at home, and wonder why I want to eat. I'm not always hungry, and perhaps this means I am an emotional eater (I already know I totally am), but if I don't get something to chew on then I am going to break.
90% of the time I go for sugar free mints or gum! I want to shout THANK YOU from the mountain tops for the master mind behind the fruit punch flavored mints. Heaven yall, they came from heaven.
Anywho, we aren't here for you to read about my mint obsession, what you are here for is to read about another cool snack that is 100% protocol.
POPCORN.
You're allowed 1 cup of corn a week. So why not use it as popcorn? NOW, 1 cup of kernels is enough popcorn to last, like a month, so use this recipe below and spread out your little snacks for those moment of "I HAVE TO EAT SOMETHING NOW".
(Remember, this will count as part of your daily vegetable so be aware)

MICROWAVE POPCORN
Ingredients:
1/4 cup pop corn kernels
Glass Bowl
Ceremic Plate
Microwave
Place 1/4 cup pop corn kernels in bowl & place plate on top
Turn microwave on and listen closely as you DON'T want it to burn (or maybe you do, but I won't call you weird because that's not nice. )
TADA!! ENJOY!

Recipe - Tuna/Salmon Patties
When I was younger my dad would make my sister and me dinner at his house; and being a single dad, he often made what he knew. By that I mean a lot of eggs, lettuce with a lump of dressing on top, fresh veggies from the garden, fried okra & squash, sandwiches and, my favorite, salmon croquettes.
I absolutely loved those things, and they were easy to make as well, so it was one of the first things I learned to cook. Canned salmon, an egg, and saltine crackers, mix it up and stick it in the frying pan. The mixing with my hands part might have been the whole reason I loved this so much. I got to play with the food, get messy, and eat something tasty all at the same time. It was a true WIN + WIN!
I have been craving them for a while now and knew that I couldn't have the crackers, so I just ignored the craving. Then on Monday I decided that I already had everything at home (no grocery store run required -- another win) to make tuna patties.
So this is how I made them, and let me just tell you...delicious.
Tuna/Salmon Patties
Ingredients: Serving Size 2 (16 oz of tuna)
- 4 cans of white tuna (in water) (or canned salmon if you like that better)
- 1/2 lemon juice
- Sea Salt & Pepper to taste
- 1/2 white onion chopped
- Green onion chopped (as much or as little as you'd like)
- 1 TBSP minced garlic
- garlic powder & onion powder to taste (optional)
- 2 eggs
- 2 TBSP of coconut oil
Directions:
- Drain your tuna, put everything in a bowl (except for the oil) and mix together.
- In the skillet put 2 TBSP of coconut oil & let it get hot
- Form patties with your hands and carefully place in the skillet
- Let the patties brown on the bottom & then flip
- Once the patty is cooked to your liking remove from skillet and enjoy.
(4 cans of tuna made 6 patties = 16 oz so my husband and I just each ate 3 = 8oz or protein each)

Recipe - Bruschetta Chicken
Delicious & nutritious tastes just like....chicken.
I made this last night based on THIS recipe. I just switched out the olive oil for coconut oil and a few other minor changes. Below is the modified recipe for Stimulock
It is so fresh, and such a nice way to mix up the protocol foods so you don't get tired of making the same ole things over, and over, and over.

Bruschetta Chicken
- 10 oz of boneless skinless chicken breast (this makes two if you want left overs make more)
- 4 or 5 small tomatoes, chopped
- 2 clove garlic, minced
- 1/2 small red onion, chopped
- 1 tbsp. Coconut Oil
- 1 Tbsp. balsamic vinegar
- sea salt & pepper to taste
- Handful basil, chopped
- In a large skillet, put 1 Tbsp of coconut oil in the bottom. Place chicken in skillet and sprinkle with chicken seasonings. Cook chicken to your liking. (or you can bake the chicken)
- Meanwhile, combine chopped tomatoes, garlic, onion, coconut oil, balsamic vinegar, sea salt and basil in a bowl. Refrigerate until chicken is ready to be served and spoon over top of the chicken. Enjoy!

Stir Fry - Egg Roll In A Bowl
Hey Yall! Got a fun easy recipe for you!
As I have said, many times before, my favorite food is Chinese; since that is the case, I do my best to cook up a protocol friendly Chinese meal each week.
Last night I made -- Egg Roll In A Bowl
Ingredients: (1 serving)
Cole Slaw Mix (bag kind)
Chicken or Beef or Eggs (5oz)
1 Onion
Cauliflower / Other Choice Veggies
Low Sodium Soy Sauce or Braggs Liquid Aminos
Green onion
Powdered Ginger
Salt/Pepper
Directions:
Cook Chicken, however your would like, and set aside.
In a large skillet - put in onion, garlic, and other veggies. Stir for a couple of minutes or until you like the texture of the onions. (if using egg, add 3 here = your 5oz of protein)
Then grab 2 handful's of the cole slaw mix (this will be your leafy green serving), and place into skillet.
Pour desired amount of Low Sodium Soy Sauce (or Braggs) over cabbage mix, and stir.
Sprinkle in powdered ginger, salt, and pepper to taste. Stir around until all veggies & cabbage are mixed well.
Cook until you like the consistency of the cabbage (I prefer for mine to be soft so I stir it for about 5 minutes)
Toss in your 5 oz of chicken/beef
Place on plate and sprinkle green onions on top
Enjoy!
*** HINT - Making more than 1 serving? Just double your slaw mix & veggies and then half it down the middle and add your protein once you have split your greens/veggies on your plate.
I love meals that are your protein, greens, and veggies ALL IN 1!
I made enough for my husband and me for dinner, as well as lunch today! I'm excited about lunch time coming up!

NEW YEAR - NEW Y.O.U
Where in the WORLD did 2014 go?
I feel like it was literally just 5 days ago. *snicker *snicker
No, but really, it went by so quickly.
With the new year comes resolutions and I like many of you made it one of my resolution's to get to where I want to be in my weight. Some of you are probably thinking - "wait, didn't you JUST get to your size 6 goal?" Yes, yes I did, but after the holidays they are a little snug so I have two goals now...
1. Get in my size 6 comfortably again
2. Get to goal weight of 130 (no matter what SIZE I am in)
I loaded Saturday and Sunday, so today is day #1 of my Stimulock Protocol, and I have to be real honest with yall.
I love it. I love how healthy food makes me feel. Guiltless mind after you have finished your meal, satisfied tummy because you are full, and I get to wake up TOMORROW and SEE my weight loss on the scale!
Win + Win + Win = WIN!
Sure, I will have a moment, later this week I am sure, where I will want sugar...BUT I will NOT give in. I'm going strong.
What are some of your hints for beating a sugar craving?
Mine are -
1. drink a caffeine free diet soda
2. eat a couple sugar free mints
3. chew some sugar free gum
4. eat your allowed Sugar free jello
Let's kick off this year with a BANG! Tell me how you are doing! Have any good recipes you want to share? I'd LOVE to hear from you!

Snack - 1 Apple
Lunch - 5oz Lean Ground Beef Burger Patties (Aldi - visit here to see more)
1 Cup of Cucumbers
1 Orange Sugar Free Jello
Dinner - 5 oz Stir Fry Chicken (Recipe on Blog tomorrow) 1 1/2 Cups of Cole Slaw Mix (stir fried with chicken) (veggies and leafy greens)
Dessert - 12 Strawberries
1 gallon of water ( I DO NOT have to have this much, but I love water...so why not?)
Parting Thought:
This could be the LAST year "losing weight" could be your New Years Resolution! I KNOW Stimulock isn't the easiest "diet" out there. BUT IT WORKS FAST with LONG LASTING results. I have kept off 40+lbs for almost 2 years! I want to help you reach your weight goal. Contact me here if you want more information or want to get started!

Health Food = $$$$$$
I would venture to say that most of us believe the false truth that eating healthy is too expensive. I say "false truth" because it sounds nicer than saying "lie"...but that's what it is, it's a lie.
If you don't have an ALDI in your hometown, I'm SO sorry, but ALDI to me is the bomb.com.
NOW, don't get me wrong, I'm a cheap-o at heart and I, like many of you, would rather get the $1 chicken sandwich vs. the $7 salad at a fast food restaurant. Who could really blame us?!
However I am here to inform, and brag just a little, about how cheap we got two weeks worth of groceries (for 2).
We got
2lbs of ground lean beef
2 packages of lean pork chops (6 chops in each)
2 bags of boneless skinless chicken breast
1 bag of apples
1 bundle of Cilantro
3 Limes
Dozen Eggs
Minced Garlic
4 round steaks
Bag of yellow onions
Zucchini
Squash
Cucumbers
bag of shrimp
Head of Cabbage
2 Lemons
Case of Waters
K-Cups (coffee)
Celery
If you don't have an ALDI in your hometown, I'm SO sorry, but ALDI to me is the bomb.com.
Making healthier decisions at the grocery store doesn't always have to break the bank. We just have to be smart about where we shop and what we can make with the foods bought that will last the longest!
With the ingredients above and some I already had I can make
-Chili
-Grilled/Baked Steak
-Cinnamon Stevia baked apples (recipe coming soon)
-Cabbage Scramble (recipe coming soon)
and a whole lot more!

Recipe Makeover - Spinach Dip

Getting in the daily greens can be TOUGH, especially if you aren't just a lover of greens, and the lovely salad does get real old from time to time, and if I have to saute spinach with my food one. more. time. I'll....you get the idea.
So basically, I am always trying to think of ways to get my greens in and this recipe I found below is a fun new way!

- 1 cup of frozen spinach - thawed
- 1 cup 1% cottage cheese
- 1 tablespoons onion powder
- 1/2 teaspoon dried parsley
- 1 teaspoons garlic powder
- sea salt to taste
Directions:
1. Using a blender, blend the cottage cheese until it is smooth and creamy2. Put the cottage cheese in a large mixing bowl, and add all other ingredients. Stir well.
I ate this today for lunch with my 1 cup of raw squash chips (just squash cut in thin slices). Gives it a nice crunch and all you really taste is the dip. Which, by the way, tastes like ranch dip, so I'm a fan!
***For all of you "EWW, Cottage Cheese! BARF" people - I feel ya, I'm not a fan of the chunky stuff either, BUT this is totally worth it, plus there are no chunks!
REMEMBER: If you eat this as your lunch, it counts as your protein, and to only eat cottage cheese 2-3 days a week because of its high sodium content.

Recipe Make Over - Pizza Spaghetti Bake
I don't know about y'all, but I crave pasta, like a lot. So the easiest recipes for me to play around with are the ones that have all the pasta goodies w/out the fatty/carby noodles.
Last nights dinner was
Pizza Spaghetti Bake - I found the original recipe here on Pinterest, but knew I needed to make a few modifications in order to be able to have it be "protocol friendly".

Pizza Spaghetti Bake - I found the original recipe here on Pinterest, but knew I needed to make a few modifications in order to be able to have it be "protocol friendly".
Serves: 3-4 (1C & 1/2 should give you the correct serving size)
Ingredients
- 1 large spaghetti squash (about 600 grams)
- 1-2 pounds lean ground beef or turkey (I use 2 in order to make SURE I get my 5oz)
- ½ yellow onion, diced
- 1 cup pizza sauce (no sugar added) (or make the protocol recipe in the back of your Stimulock Book)
- 1 teaspoon dried basil
- sea salt and pepper, to taste
- 3 eggs, whisked
- (optional: add anything you like with pizza: veggies,basil, etc.)
Instructions
- Preheat oven to 400 degrees.
- Option 1 - Cut spaghetti squash in half lengthwise. Place spaghetti squash cut side down on a baking sheet and bake for 20-25 minutes or until the skin of the squash gives when you press on it. Then reduce oven heat to 350 degrees.
- Option 2 - I always prep the morning of by cutting my spaghetti squash in half width wise, place it "hole down" in a crock pot of about 3 inches of water, put it on Medium heat for 8 hours. It's ready to scrape out into the dish when you get home!
- Once squash is done cooking, remove threads and place in baking dish.
- Place a large pan over medium heat. Add beef/turkey and onion. Cook until pink no longer remains.
- Add pizza sauce, dried basil and sea salt and pepper to the pan and mix well.
- Add meat mixture to the baking dish and mix well with spaghetti squash threads.
- Lastly, add whisked eggs to the baking dish and mix everything together until you can no longer see the eggs.
- Place in oven and bake for 1 hour or until the top of the mixture forms a slight crust that doesn’t give when you press on it in the middle of the dish.
- Let rest for 5 minutes before serving.
Once again - This is an AWESOME protocol dish. This one and my "shrimp scampi pasta" are two dishes I would eat anytime, on Stimulock or not...yea, they're that yummy.

6X26 UPDATE
Geeze,
Sorry friends, I haven't updated yall in a while. However - I AM DOING GREAT! 40 something days strong and I feel amazing. My weight is coming off slower this time because I don't have as much to lose as I did last time, but I feel like a million bucks and I can tell that I am losing inches like crazy. I'll measure this weekend and give you an update on just how many.
17 days until I'm 26!
My 8's are loose, so I am headed in the right direction. Even if I don't "fit" in a 6 by my 26th birthday I am CONFIDENT that I did SO well and will be 100% happy with how far I came in such a short time.
Then when I get back from my "Golden Birthday Trip" I will get back on Stimulock, finish up, until I reach my goal, then lock this new weight in! <- MOST IMPORTANT PART
I'm excited! Sorry about not updating sooner!!
(Here is a photo of how skinny my face has gotten! YAY) I'm so happy that I haven't cheated ONCE! It hasn't been easy but BOY is it worth it!

The Struggle is REAL
The Struggle is REAL yall.
I am doing really well, down 4.2lbs since Monday and feeling great, but these
co-workers of mine keep bringing in these sweets!
I walk in on Monday, head back to the kitchen to refill my water bottle and BAM - chocolate covered Oreos and rice crispy treats...ON STICKS. It would be so easy to just grab 10 and eat them, BUT I didn't. By Tuesday afternoon they were all eaten and I thought I was in the clear.
NOPE.
One of our sweet new interns at work decided to bring in home made brownies. Can't a girl get a break?
Then Wednesday rolls around and one of our new team members brings in, listen to this...fruity pebble rice crispy treats.
I can't make this stuff up yall. IT HAPPENED. Bam, Bam, Bam, I felt like I was in a boxing match with Sugar and I was about to get knocked out.
Through will power, and just sheer ignoring the sweets I made it through.
I walk into the kitchen this morning - a whole new tub of chocolate covered oreos were making their appearance.
I'm going to start bring a gallon of water with me every day so I can avoid the kitchens. (Disclaimer, I don't have to drink a gallon every day, I choose to because I really like water, and it makes my hair grow!)
I personally chose today, after seeing the new sinful cookies, to make a longer trip to the other kitchen to avoid them at all cost.
A girls gotta do what a girls gotta do.

6X26 - Challenge
Hey sweet friends!
It's been a while since I have uploaded any new recipes, or really just anything for that matter.
Sorry about that. Life has been a fast ride recently giving me very little time to just sit down and blog.
Never-the-less, here I am and I have an exciting goal to tell you all about!
My 26th birthday, which also happens to be my Golden birthday is on September 26th, and I have set a goal to be a size 6 by my 26th (6X26). With the help of the Stimulock System I know that I can get to my goal in no time!
I just have to be determined to get this last bit of weight off and get to my goal.
Nothing that is given to you in life is as sweet as something you had to work for, and trust me I like sweets. I have a mean sweet tooth, so this goal IS going to be accomplished and it IS going to be oh so sweet!
Some of the obstacles I might face will be planned trips in August, my best friend coming to visit in just a couple of weeks, and then the ever dreaded weekends. Don't get me wrong, I love the weekends, but I like the routine of work days...they help keep me on track and focused vs. my mind wondering off to candy land.
I just need to be prepared for those few times when sticking to protocol might pose a few challenges, and I will be A-OK!

Smothered Pork Chops
This recipe is SUPER easy and has a ton of flavor! I'm not the biggest fan of onions, but I ate them up with this. (Don't be jealous of my fine china ;) )
Smothered Pork Chops
Smothered Pork Chops
Ingredients:
Lean thin cut pork chops with the fat cut off the sides
1 onion
I can't believe it's not butter spray
Crushed Garlic
Garlic Powder
Instructions:
Turn the burner on Medium heat
Cut the onion, separate the sections, and put in the skillet with butter spray and crushed garlic (as much or as little as you want)
Sprinkle garlic powder on each side of the pork chop
Once the onions have caramelized remove them from the skillet and set to the side.
Place pork chops in the same skillet and cook through
Once all the pork chops are cooked put the onions back in the skillet and place a lid on the top on low heat for about 5 minutes.
Remove from skillet and serve.
*Be sure to weigh your pork chops before you put onions on them as to get 5oz (3 of them added up to 5oz for us)
It was so yummy!
This recipe goes great with corn and a green smoothie!

"Soup-er Soup" - Cilantro Lime Chicken Soup
Hey Y'all - I hope you are having a "SOUP-ER" day!
“Soup
Season” is almost over, but I think this is one of those soups that I will cook
year round. The amount of flavor in this soup is UNREAL. I have made it about 5
times now, if not more, and each time
it is consistently delicious. I found this recipe here on Pinterest and modified it
to match up with Stimulock Protocol.
Ingredients
·
2 Tbsp coconut
oil
·
1 medium yellow
onion
·
2 stalks celery
·
4 cloves garlic
·
4 boneless skinless chicken
breast
·
4 cups low sodium
chicken broth
·
2 cups of water
·
1 (14.5 oz.) can
diced tomatoes w/chilies
·
1 tsp oregano
·
½ Tbsp cumin
·
1 medium lime
·
½ bunch cilantro
Instructions
1. Dice the onion
and celery Mince the garlic , or throw in 4 tablespoons of pre-minced garlic.
Cook the onion, celery, and garlic in coconut oil over medium heat for about 5
minutes or until tender.
2. Add the chicken
breast, chicken broth, water, canned tomatoes with chilies, oregano, and cumin
to the pot. Bring the whole pot up to a boil over high heat then reduce the
heat to low, place a lid on top, and let simmer for one hour.
3. After simmering
for an hour with a lid on, carefully remove the chicken breast from the pot and
use two forks to shred the meat. (weigh out your 5oz servings). Squeeze the
juice of one lime into the soup. Get as much juice as possible from the lime by
using a spoon to scrape the inside of the lime.
4. Rinse the
cilantro and then roughly chop the leaves, add to the pot, give it a quick
stir, and serve.
5. Put 1 cup of “soup”
into your bowl, add your 5oz of chicken and ENJOY!
Tastes great when warmed up as left overs!
